Simple Salmon Dinner

Happy Fall!! This time of year is my absolute favorite. The weather, the colors, and the drop in humidity! Having said that, I don't love the idea of spending a ton of time indoors cooking. So this time of year, I focus a lot on the super quick dinners. Whether the prep is quick or the actual cooking is quick, I'm all about simple. The following recipe is the easiest salmon recipe. Feel free to take creative liberty with it. Sometimes I add dill instead of parsley, sometimes lemon juice instead of real lemon, etc. As long as the fish is cooked, then you're good. How do you know if your salmon is cooked? Here is a helpful article. Don't be intimidated by salmon. Just buy it fresh that day, and have fun!

Simple Oven Baked Salmon

Ingredients:

  • Salmon (6oz per serving)

  • Lemon

  • Olive Oil

  • Parsley

Directions:

  1. Preheat the oven to 400F.

  2. Line a baking sheet with aluminum foil.

  3. Place salmon (skin side down) on the foil.

  4. Drizzle olive oil, salt, pepper, and parsley on the salmon. Place lemon slices on the fish before putting it in the oven.

  5. Bake for 15-20 minutes or until the thickest part of the salmon is cooked through.

 

 

For the 20 minutes that the salmon is cooking, use it as an opportunity to sauté veggies on the stove top.  Aim to have 3 different vegetables.  Examples below:

·       Swiss chard, onion, tomatoes

·       Onion, spinach, mushrooms

·       Zucchini, squash, asparagus
